Sugar Free Banana, Date & Walnut Flapjacks
Ingredients:125g rolled oats
125g butter
150g pitted dates
60g walnuts
2 small and very ripe bananas
1 tsp cinnamon
1 tbsp honey
Directions:
1. Preheat the oven to 180degrees
2. Cover the dates with boiling water and leave for 5 minutes. Remove, dry and chop finely. Mash the ripe bananas in a separate bowl.
3. In a saucepan, melt the butter and honey with the walnuts and the dates. After 5 minutes or so, once everything has combined together nicely, stir in the mashed bananas and the cinnamon.
4. Add the oats and combine well. Pour into a lined loaf tin and cook for 20 minutes. It should be golden on the top but still have a softness when touched.
5. Take out of the oven and leave to cool completely. Remove from the loaf tin and cut into rectangles.
