Mojito Chicken Salad



Ingredients:


½ cup non-fat, plain Greek yogurt
¼ cup mayonnaise
¼ cup + 1 tbsp. honey
2 tbsp. minced fresh mint leaves
1 tbsp. lime juice
2 tsp. lime zest
½ tsp. salt
4 cups shredded (or chopped) cooked chicken breast (about 1 ½ lb.)
½ medium red onion, chopped
3 large celery stalks, sliced
Optional: bread, crackers, or lettuce for serving

Directions:

1. Prepare the mojito dressing. In a medium bowl, add the Greek yogurt, mayonnaise, honey, mint, lime juice, zest, and salt. Whisk until well combined. Cover and store in the refrigerator for 30 minutes.
2. Prepare the salad. In a large bowl, add the chicken, red onion, celery, and mojito dressing. Stir to combine. Serve cold. Store covered in the refrigerator.
