Corn Wheels with Lime Butter
Ingredients:
4 medium ears of corn
2 Tablespoons butter or margarine
2 Tablespoons fresh lime juice
1/2 teaspoon pepper (optional)
water for boiling
Directions:
Using a cleaver or large knife, cut corn into 1-inch lengths. In a large pot, bring water to boil over high heat. Add corn wheels; cover and boil 12 minutes.
Melt butter in a saucepan, mix with lime juice. Transfer corn to serving platter and drizzle with lime-butter. Sprinkle with pepper, if desired.
Notes: For an added twist, after the corn is boiled, remove it, drain and place on the grill to caramelize its natural sugars. Add the lime butter glaze after. The corn-wheels may also be skewered after boiling for easier grilling and serving.
