Quinoa and Oats Breakfast Bowl
1/2 cup quinoa
1/2 cup instant oats
2 cups freshly pressed orange juice or any other fruit juice yuo prefer (no sugar added/not strained)
2 cups skim milk
1 1/2 cups dried fruit (any or mix pref sweeter ones as they will add the needed natural sugar to the recipe)
2 tsp cinnamon powder
2 tsp vanilla extract
Directions:
1. Rinse quinoa
2. Bring Quinoa and fruit juice to a boil in a pan
3. Reduce heat and simmer for 15 minutes or until most of the fruit juice is absorbed.
4. Add milk, cinnamon and dried fruits. Simmer and cover it for another 10 mins, while stirring it occasionally. Add oats and simmer for 5 mins
5. Remove from heat and stir in vanilla extract.
Serve this hot or cold. It's a nice breakfast or snack.
