Mexican Corn on the Cob
Ingredients:
6 corn on the cobs
3 tbs mayonnaise
1/4 cup crumbled Cotija cheese
2 tbs cilantro
1 tsp chili powder
1 lime
Directions:
1. Remove the husks of the corn but leave the core attached at the end so you have something to hold onto.
2. Bring a pot of water to a boil. When it has reached a rolling boil, place the 6 corns on the cob in the pot and cover. Cook for 8 minutes or until tender.
3. While the corn is hot, slather with 1/2 a tbs of mayonnaise per corn on the cob.
4. Squeeze lime juice over the corn and then sprinkle some chili powder.
5. Lay the slathered corns on a platter and sprinkle evenly with Cotija cheese and cilantro.
6. Serve with extra lime wedges and hot sauce (if you like things spicy).
