Double Chocolate Cookies.


Ingredients:

226 grams (8 ounces) dark chocolate, chopped (the smaller pieces, the better - easier to melt)
56 grams (4 tablespoons) unsalted butter
80 grams (2/3 cup) all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
2 large eggs
165 grams (3/4 cup) light-brown sugar
1 teaspoon vanilla extract
340 grams (12 ounces) semi-sweet chocolate chips or chocolate chunks

Directions:

1. Preheat the oven to 180 degrees C (350 degrees F). Line two baking sheets with parchment paper.
2. Melt the chopped chocolate and butter in a microwave-safe bowl. Stir every 20 seconds until melted (do not overheat). Set aside.
3. Whisk together flour, baking powder and salt.
4. Put the eggs, sugar and vanilla extract in a stand mixer with a paddle attachment. Beat until light and fluffy.
5. Pour in the melted chocolate and beat until well combined.
6. Mix in the dry ingredients until just incorporated.
7. Stir in the chocolate chips until evenly dispersed.
8. Use a cookie scoop or a tablespoon to portion out the dough placing the cookies about 2 inches apart on the prepared baking sheets.
9. Bake for 12 to 15 minutes, or until cookies are glossy and the tops start to crack.
10. Cool on the baking sheets for 10 minutes then transfer to a wire cooling rack to cool completely.
