Stone Fruit Caprese

Ingredients:
4 slices of ripe peach
4 slices of ripe black plum
4 slices of fresh mozzarella, cut crosswise into half-circles
6 basil leaves
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
A pinch of salt, about 1/4 teaspoon
1/8 teaspoon black pepper

Directions:

1. Layer the peach, plum, and cheese in alternating slices on a plate or platter. Tuck basil leaves in and around.
2. In a small bowl, whisk together the oil, vinegar, salt and pepper.
3. Drizzle dressing around the edge of the platter and serve.
