Hushpuppy - Cornbread Fritters

Ingredients:

1/2 cup Whole Wheat Pastry Flour
1/2 cup Yellow Cornmeal
1/4 tsp Baking Soda
1 large Egg
1/2 cup Buttermilk
1/4 cup Scallion (Green Onions)
1 Jalapeno, deseeded
Salt and Pepper to taste

Directions: 

Heat some oil for deep frying. Mix all the dry ingredients together -flour, cornmeal, leavening and seasoning. Next add the Jalapeno and green onions and give it a toss. In another bowl, mix together the wet ingredients and whisk well until combined. Add it to the dry ingredients and mix until combined. Make sure not to overmix. Using a small ice-cream scoop (for uniform fritters) or just spoon, take some batter at a time and drop them in hot oil (ideally heated to around 375F). They will keep flipping about.  Simply use a slotted spoon to cook them on all sides. Keep in mind to keep the oil at 350-375F cos higher or lower than that would lead to substandard hushpuppies.  Drain them on paper towels. Enjoy them hot. Tastes best fresh.
