Chicken in Flaked Coconut



Ingredients:  

700-800 grams of soft chicken meat (fillet)
2 eggs
1 cup of flaked coconuts
0.5 cup of flour
3-4 cloves of garlic (crushed)
3 tablespoons of olive oil
Salt and freshly ground black pepper

For sauce:
2 tablespoons of mustard
0.5 cup of peach jam
Directions:

Put flaked coconut, flour, salt and black pepper in a bowl and mix well. In another bowl put the eggs and garlic and mix well with fork. Dip chicken fillets in the eggs and than in the coconut mixture. Then place fillets on oven tray covered with parchment, pour with little bit of olive oil and place in a hot oven at 200 degrees, for 30-40 minutes, until they’re ready. From time to time we may turn over the fillets.
Now, we can Prepare the sauce: Mix together the mustard and peach jam, put in the refrigerator. When the chicken fillets are well roasted, pour the sauce on top of them and serve with cooked rice.
